Delicious Chocolate Cake with Chocolate Ganache

Try this healthy chocolate cake instead of a store-bought one on your next (birthday) party! Who said that chocolate can't be healthy? If you pick a high quality ingredient (use only dark chocolate 70% or higher cocoa content), it will not only taste better, it will be healthier too! 

For my scrumptious chocolate cake I used

2 oz of melted Green&Black's Organic Chocolate which has 70% of cocoa. And look at that fiber content! It was also infused with fine Arabica coffee beans, so it had a discrete coffee flavor. 

1/2 cup of all-purpose flour

3/4 cup of whole-wheat flour

  • 1/2 cup of cocoa powder

  • 1 tablespoon of baking powder

  • 1 teaspoon of baking soda

  • 3 tablespoons of coconut oil

  • 3 eggs

  • 1 and 1/2 cups of sour cream (or plain yogurt)

  • 2 teaspoons of pure vanilla extract

  • 1/2 cup of coconut sugar (or raw honey if you prefer)

Mix dry ingredients first. In a separate bowl whisk coconut oil with eggs, gradually stir melted chocolate, add vanilla extract and sour cream (don't over-mix it). Gently incorporate wet and dry ingredients and pour into a 9-inch cake pan. Try to even the batter in the pan before putting it in the 350 ° oven for 25-30 minutes. Take a toothpick and insert it in the cake. If it comes out clean, the cake is done.

Let it cool for an hour before cutting into two parts and filling it with ganache.

For chocolate ganache you will need 4 oz of chocolate, 2 tablespoons of unsalted butter and 2 tablespoons of coconut oil. Just put all ingredients in a double boiler, let them melt on a medium heat and simmer for about 10 minutes. Let it slightly cool and then spread some between the layers of the cake. You can put a little on the top of the cake too. Garnish the whole cake with fruit, whipped cream or chocolate bits.

The real taste of chocolate is bitter. You do not need a ton of sugar in order to make it taste good. So this cake is also a bit bitter for you who do not eat dark chocolate regularly. :)
