Coconut Chocolate Chip Cookies

These guilt-free coconut and chocolate cookies were the first cookies I ever made. And they came out amazing! They are made of healthy ingredients, so indulge yourself! What can be better than when healthy combines with delicious?

½ cup whole-wheat flour

½ cup all-purpose flour

¾ cup rolled oats

½ cup unsweetened coconut

1/3 cup coconut oil

2 eggs

½ cup maple syrup or raw honey

1 T vanilla extract

1 tsp baking powder

1/3 cup dark chocolate chips

Preheat oven to 350 *F. In a food processor grind the oats into fine consistency. Add them to a bowl with the rest of dry ingredients. In another bowl mix wet ingredients. Add dry into wet ingredients and stir just until everything is combined. At the end, fold in the chocolate chips. The batter will be wet. Drop cookies onto a lined baking sheet and bake 12-15 minutes. They will be pale, but that is because of the whole and unprocessed components in them. I got about 20 cookies out of this batch. Wholesome snack for kids or adults anytime!
