Escarole and Beans

This is one of our favorite healthy meals. Escarole is high in folic acid, fiber and vitamins A and K. We try to include this or similar meals into our diet at least once a week.

2 bunches of escarole, chopped

3 T olive oil

2 cloves garlic, finely chopped or pressed

¼ tsp red pepper flakes

3 T chicken broth

1 cup dry white beans

½ cup dry red beans

salt, pepper

Soak the beans overnight and cook them according to the package instructions. Bring a saucepan of salted water to a boil. Once boiling, blanch escarole by allowing to boil for 2 minutes until brightly colored.

Heat olive oil in a pan on medium-high until it becomes hot. Add smashed garlic and red pepper flakes. Sauté to infuse oil about 2-3 minutes. Stir in escarole and add broth. Cover with a lid and cook for 5 minutes. Add beans and cook for another 2 minutes. Season with salt and pepper to taste. Serves 4.
